There’s something about oatmeal that just does it for me.  Does anyone else feel that way?  I’ve tried so many different things for breakfast and have come to the conclusion that nothing really sticks with me like a hearty bowl of oatmeal.  Pair it with an egg or two and I’m good to go for hours!  I remember my grandpa used to eat oatmeal… seriously you guys, like literally EVERY SINGLE DAY of his life… and I thought he was so strange.  Well, I guess I am becoming my grandpa!  Oh Lord help us if that’s true – a mini George Delmar Taylor the world could not handle.  He was definitely a character and I think they broke the mold when he was born!  I’ve decided this Apple Pie Steel Cut Oatmeal recipe comes in at a VERY close second place to the Pumpkin Pie Steel Cut Oatmeal recipe we recently posted.  These two recipes have become a staple in our menu and I eat one or the other most days for breakfast at work.

Apple Pie Steel Cut Oatmeal

Ingredients
  

  • 1 tbsp butter grass-fed, unsalted preferred
  • 1 cup steel cut oats
  • 3 cups hot water
  • 1 cup 1% milk
  • 2 medium/large apples skinned and chopped
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp salt
  • 5 tbsp walnuts chopped
  • pure maple syrup to taste

Instructions
 

  • Melt butter and toast oats in a medium sauce pan until golden and fragrant, approximately 1-2 minutes.
  • Add hot water and chopped apples.  Bring to a boil and let simmer for 20 minutes, stirring occasionally.
  • Stir in milk, vanilla, cinnamon, nutmeg, allspice and salt.  Cook for another 10 minutes.  Remove from heat and let sit for about 3 minutes.  
  • Divide into 5 bowls, or prepare for freezing (see link in notes above).  Add pure maple syrup or sweetener of choice to taste.  Hint… taste before adding sweetener as you may decide you don’t need it.  Top with 1 tbsp of chopped walnuts and enjoy!
