Healthy Jalapeno Popper Recipe

Ingredients
  

  • 8 small jalapeno peppers
  • 4 ounces of light cream cheese
  • 2 Tablespoon of fat free mayonnaise
  • 1/2 cup of shredded cheddar cheese
  • 1 Tablespoon garlic powder
  • 4 pieces of finely chopped bacon
  • 3/4 cup of cornflake crumbs or bread crumbs
  • 3 eggs or 3/4 cup of egg substitute
  • Olive Oil cooking spray

Method
 

  1. Preheat the oven to 350 degrees
  2. Line cooking pan with tinfoil and coat with cooking spray (helps with clean-up)
  3. In a medium bowl, mix the cream cheese, cheddar cheese, garlic powder and chopped bacon; mix well
  4. Wash the jalapenos, cut them in half and remove the seeds.
  5. CAUTION: Wear gloves and do not rub your eyes!
  6. Stuff jalapeno halves with the cream cheese mixture
  7. Crack and beat eggs in a bowl
  8. Place crumbs/flakes into a separate bowl
  9. Dip stuffed jalapeno halves into the eggs and then roll in crumbs/flakes to coat the jalapenos
  10. Transfer coated jalapenos to the baking sheet
  11. Bake in the oven at 350 degrees until filling is bubbling (about 30 minutes)
  12. Serve while warm; 2 poppers per serving
